Sometimes I buy a few extra bananas that I know won't get eaten in an effort to have a plausible excuse to make banana bread! It's just one of those things that I find so comforting to wake up to and that doughy banana flavor just seems to get better with age... Toast it, warm it, spread it with butter or honey and enjoy it with your chosen form of morning caffeine!

Banana Bread
Preheat oven to 325F
1/2 cup of butter
1 cup of sugar
2 extra large eggs
3 really ripe bananas
1 tablespoon of milk
1 teaspoon of cinnamon
1 teaspoon of vanilla extract
2 cups of all purpose flour
1 teaspoon of baking powder
1 teaspoon of baking soda
beat butter and sugar until light and fluffy
add eggs one at a time until completely incorporated and mixture is thick and fluffy
In a small bowl, mash together banana and add cinnamon and milk
add banana mixture to butter and sugar and combine until thoroughly incorporated
slowly add flour mixture to banana mixture and fold until all the flour is completely gone. If you're feeling a little crazy, this is where you could add 3/4 cup of chocolate chips!
fill regular buttered loaf pan and bake for approximately 1 hour or if baking muffins, line with parchment or muffin cups and bake for approximately 20 mins until a toothpick inserted into the centre of the cake comes out clean

Thanks! I usually put chocolate chips in my Banana Bread. My family tried it once years ago and I don't think that we've made a batch without since.
