stuffed


One of my all time favorite home cooked meals is my turkey breast and quinoa stuffed peppers.  There's nothing like this hearty and healthy meal that just makes me feel good from the inside out.  It's filled with veggies, hearty grains and not only is it a crowd pleaser, it couldn't be easier to make!
3 cups of chicken stock {I prefer to use this kind}
1 1/2 cups of quinoa
1/2 yellow onion diced
3 garlic cloves finely chopped
3/4 lb of turkey breast
2 teaspoons of Worcestershire sauce
1 28 oz can of fire roasted whole tomatoes {I prefer these}
1 tablespoon of tomato paste
1 teaspoon of dried oregano
2 grated zucchini's
1/2 cup of parmesan cheese {if it's powdery it doesn't count}
salt and pepper
4 cups of warmed chicken stock
6 red peppers

Preheat oven to 350 F


Pre-make your Quinoa with the designated 3 cups of chicken stock and 1 1/2 cups of uncooked Quinoa. Follow cooking instructions and once cooked set aside.  Heat one tablespoon of olive oil in fry pan and fry onions until translucent then add garlic. Add turkey breast and cook until turkey is lightly browned. Add seasonings, Worcestershire, tomato paste and entire can of whole tomatoes. Break up with your spatula and incorporate ingredients into turkey and onion mixture.  Once thoroughly mixed, add grated zucchini's and salt and pepper. Add cooked Quinoa and cheese and taste for seasonings. Add whatever you need to make it delish and once fully incorporated set aside {suggestions, bay seasonings, paprika, chili powder, herbs de provence etc}.


Wash, slice off the tops and deseed peppers while maintaining shape and structure of these little vessels. Place them in a large baking dish. You may need to slice the bottoms ever so slightly to create stable bottoms for the peppers. Continue to fill peppers with your scrumptious turkey mixture until they're full to the top. Pour your warmed chicken stock into the bottom of this pepper filled baking dish, think of giving them a delicious little bath! Cover the baking dish with aluminum foil and put in oven for 45 minutes.


After designated time, take baking dish out of oven and remove foil. Sprinkle extra parmesan cheese on top of peppers and put back inside the oven sans aluminum to bake for an extra 15 minutes.

Voila! A delicious and healthy dinner that will have your taste buds dancing in delight!
