cool nights, warm tummies

There's nothing better than having a rich hot chocolate at the end of the end of the day... Wait, I lied, there IS something better than a rich hot chocolate at the end of the day. Home made sweet mint marshmallows melting on top of a rich hot chocolate, at the end of the day :)
recipe here {sans toasted coconut but add 1/2 teaspoon of peppermint extract}
Sprinkle the bottom of the baking dish with crushed peppermint candies and powdered sugar, add marshmallows and top with another coat of crushed candies and sugar. Let it dry out overnight, cut into squares and redust with powdered sugar.
Make your hot chocolate and add 2, 3, 4 {or more} of your minty masterpieces and watch them slowly melt and create a chocolate minty heaven! The photos really don't do it justice but I'll go so far as to say that this might just change your life. Here's to cool nights and warm sweet tummies!

    It's really not that hard, the key is to have a great stand mixer and to work quickly with damp hands! After they've dried out over night {or for a minimum of 6 hours} powdered sugar will be your best friend!

  5. I am so in awe you make marshamallows! You manage to make it look so tempting and doable too, not the sticky messes I seem to end up with (I console myself by saying, as long as it tastes good going down! :))

  12. I know I'm not going to try and make marshmallows but I want them, I really do. I think the only reason I like to drink hot chocolate is the mountain of marshmallows I put on top, when I run out, I reheat what's left of the drink so I can put some more on!

  15. oh yum- I should really try making these- my monkeys have hot cocoa every morning and night these days- night time means mini marshmallows. The only issue is that my monkeys are terribly awful at making things that require any length of waiting- overnight is like torture. Maybe I can make them and surprise them!
