Serves 3
Dressing
Ginger
1/2 cup plus 2 tablespoons of Olive Oil
Salt Pepper
1 1/2 Tablespoons of White Wine Vinegar
Salad
1-2 cups of chopped Heirloom Tomatoes
1-2 cups of chopped cold Watermelon
1 Tablespoon of finely chopped Basil
2 Tablespoons of finely chopped red onion
1/2 cup crumbled feta or goat cheese
1/2 of a ripe Avocado chopped
1 Tablespoon of finely chopped Chives
Peel and then grate a nub of ginger in order to squeeze enough juice to yield around 1 Tablespoon of ginger juice.
Whisk ginger juice, oil, salt, pepper and vinegar together until thick and well combined. Set aside.
Combine Tomatoes, Watermelon, Basil, Red Onion and dressing and allow to sit for around 30 minutes in the fridge.
After marinating, add remaining ingredients and serve with a smile!
My Mint Peach Spritzer was made up of fresh peaches and peach juice, fresh mint ice cubes and lots of sparkling water.
