stuffed
One of my all time favorite home cooked meals is my turkey breast and quinoa stuffed peppers. There's nothing like this hearty and healthy meal that just makes me feel good from the inside out. It's filled with veggies, hearty grains and not only is it a crowd pleaser, it couldn't be easier to make!
3 cups of chicken stock {I prefer to use this kind}
1 1/2 cups of quinoa
1/2 yellow onion diced
3 garlic cloves finely chopped
3/4 lb of turkey breast
2 teaspoons of Worcestershire sauce
1 28 oz can of fire roasted whole tomatoes {I prefer these}
1 tablespoon of tomato paste
1 teaspoon of dried oregano
2 grated zucchini's
1/2 cup of parmesan cheese {if it's powdery it doesn't count}
salt and pepper
4 cups of warmed chicken stock
6 red peppers
Preheat oven to 350 F
Pre-make your Quinoa with the designated 3 cups of chicken stock and 1 1/2 cups of uncooked Quinoa. Follow cooking instructions and once cooked set aside. Heat one tablespoon of olive oil in fry pan and fry onions until translucent then add garlic. Add turkey breast and cook until turkey is lightly browned. Add seasonings, Worcestershire, tomato paste and entire can of whole tomatoes. Break up with your spatula and incorporate ingredients into turkey and onion mixture. Once thoroughly mixed, add grated zucchini's and salt and pepper. Add cooked Quinoa and cheese and taste for seasonings. Add whatever you need to make it delish and once fully incorporated set aside {suggestions, bay seasonings, paprika, chili powder, herbs de provence etc}.
Wash, slice off the tops and deseed peppers while maintaining shape and structure of these little vessels. Place them in a large baking dish. You may need to slice the bottoms ever so slightly to create stable bottoms for the peppers. Continue to fill peppers with your scrumptious turkey mixture until they're full to the top. Pour your warmed chicken stock into the bottom of this pepper filled baking dish, think of giving them a delicious little bath! Cover the baking dish with aluminum foil and put in oven for 45 minutes.
After designated time, take baking dish out of oven and remove foil. Sprinkle extra parmesan cheese on top of peppers and put back inside the oven sans aluminum to bake for an extra 15 minutes.
Voila! A delicious and healthy dinner that will have your taste buds dancing in delight!

Oh! J-hello San Francisco!
This is San Francisco. Made entirely out of Jell-O.... are you kidding me? No, I'm not!


Liz Hickok is a San Francisco based artist whose latest work with Jell-O has the town talking and I can see why!

Liz's artist statement, "I create glowing, jellied scale models of urban sites, transforming ordinary physical surroundings into something unexpected and ephemeral. Lit from below, the molded shapes of the city blur into a jewel-like mosaic of luminous color and volume."

not so 'tubby' custard
So after my love's return home, yesterday was filled with smooches, long talks about the wonders of New York City and dreaming of living in other far away places {hello barge living on The Seine}. With a cup of warm tea on a chilly day and a tummy full of an old family favorite, Tubby Custard was the sweetest way to welcome him home. This family recipe is actually guilt free if you make it with brown rice and skim milk but feel free to experiment with your naughty side too! Full fat, white rice and sugar is a delicious no brainer, but if you can make it healthier, why not I say! It's also a fabulous way to make use of all that left over rice that comes with your chinese delivery...
6 ramekins
2 tablespoons of brown or white rice
1 2/3 cup of milk of your choice
2 tablespoons of non fat milk powder
2 eggs
1 teaspoon of vanilla extract {no imitation vanilla, stick to the good stuff}
Sweetener of your choice {brown sugar, honey, splenda etc} I use about 3 tablespoons of agave nectar
maple syrup {optional}
Preheat your oven to 350 F. Make a water bath so that water is approximately 1/2 way up the side of your ramekins. Spoon rice of your choice into the bottom and set aside. In a jug with a pouring spout combine the rest of your ingredients except for the eggs. This being so that you can adjust the sweetness of this dish according to your own taste. Just continue to whisk and add as much agave {or other sweet alternative}, tasting after each addition until you've reached your desired level of sweetness. Whisk eggs thoroughly into mixture.
Add custard mixture to your rice and stir each ramekin so that the rice and milk mixture are evenly distributed throughout. To add a little something extra, I drizzle a small amount of maple syrup across the top. It's give a hint of smokey sweetness to the custard.
Bake for around 35 minutes until the custard is set.
These little treats are perfect warmed up for breakfast or for an afternoon pick me up. Personally, I can't think of a better way to start the day!

sweet homecomings

Well finally my love returns home today! Wahoo! He's been in NY all week for business which has meant lots of girly get togethers, some reflective solitude at summers end and perhaps even a sleep over or two... though last nights sleep over was not entirely voluntary. Some pesky rats *eeeeekk* decided that we were going to duke it out for living quarters and believe me, they won hands down!
The girls and I stayed awake making each other cackle and decided for an impromptu in and out midnight snack! I mean when was the last time you treated yourself to something so fabulous in the wee hours of the morning {and not because you were elbow deep in your liquor of choice}?!!
I'm making one of my love's favorite treats today, plus a delicious dinner! So stay tuned for some fabulous recipes that appeal to cooler nights and fuller tummies!
